This one-pan Garlic Butter Steak Bites and Potatoes recipe is everything: tender, juicy steak bites, crispy golden potatoes, and a rich garlic butter sauce that ties it all together. It’s quick, simple, and the perfect dinner for busy weeknights or cozy nights at home.

Ingredients

Scale

For the Potatoes:

  • lbs small gold potatoes, quartered (½-inch thick)
  • 2 tbsp ghee (swap for butter or olive oil if you prefer)
  • Sea salt and black pepper, to taste

For the Steak:

  • lbs sirloin steak, cut into ¾–1-inch cubes (tip: slice against the grain for tenderness)
  • 2 tbsp ghee (or butter/olive oil)
  • Sea salt and black pepper, to taste

For the Garlic Butter Sauce:

  • 4 cloves garlic, minced (because, garlic = flavor)
  • 1 tbsp fresh rosemary, minced (swap with thyme or oregano for a twist!)
  • 2 tbsp parsley, minced (plus a little extra for garnish)

Instructions

Step 1: Soften the Potatoes

Microwave hack: Place your potatoes in a microwave-safe bowl with ¼ cup water. Cover loosely, then microwave on high for 5–6 minutes until they’re just fork-tender. Drain and set aside.

Step 2: Crispy Crowd-Pleasing Potatoes

  • Heat a large skillet (cast iron is great) over medium-high heat. Melt 2 tbsp of ghee.
  • Add the pre-cooked potatoes in a single layer. Sprinkle with salt and pepper.
  • Let them sit undisturbed for 2 minutes to get that golden crust. Then stir occasionally, cooking for another 4 minutes until evenly browned.
  • Here’s where it gets good: during the last minute, push the potatoes to one side of the skillet. Add the garlic, rosemary, and parsley to the other side to sauté for about 1 minute. Let those flavors mingle with the potatoes.
  • Remove everything from the skillet and cover it to keep warm.

Step 3: Steak Bite Perfection

  • In the same skillet, melt the remaining 2 tbsp of ghee over medium-high heat.
  • Add the steak cubes (in batches if needed—don’t overcrowd). Season with salt and pepper.
  • Sear each side undisturbed for about 2 minutes. You’re aiming for a golden crust outside and juicy, tender steak inside.

Step 4: Pull It All Together

  • Add the potatoes and garlic herb mix back into the skillet with the steak bites.
  • Toss to coat everything in that buttery, garlicky sauce. Garnish with extra parsley for a fresh, vibrant finish. Serve hot and enjoy the praises!

Notes

Tips & Tricks

  • Better Steak Bites: Cut steak against the grain and pat dry before cooking. This ensures tender bites and a perfect, golden sear.
  • Crispy Potatoes: Don’t skip the microwave step—it softens them so they crisp up beautifully in the skillet.
  • Flavor Amplifiers: Want a little heat? Add a pinch of red pepper flakes while you’re tossing everything together.

Pair It Up

This dish pairs so well with:

  • Something fresh: A simple green salad or steamed green beans.
  • Something indulgent: Creamy mashed potatoes or crusty bread to soak up the garlic butter sauce.

Leftovers & Storage

  • Store them in an airtight container in the fridge for up to 4 days.
  • Reheat in a skillet over medium heat. Add a splash of broth or butter to bring back the moisture. (Avoid microwaving—steak can dry out quickly.)
  • Want to freeze it? Yep, you can! Store steak and potatoes separately in freezer-safe containers for up to 3 months. Thaw overnight in the fridge before reheating.
