Main Ingredients:

  • 1 lb shredded chicken breast (pre-cooked or rotisserie works well)
  • 6 oz cooked and chopped bacon (about ½ package)
  • 3 cups frozen hash browns (or freshly shredded potatoes)
  • 2 crowns broccoli florets (about 2 heaping cups)
  • 1 diced white onion (1.5 cups)
  • 1 cup sliced mushrooms

Sauce Ingredients:

  • 1 (13.5 oz) can coconut cream
  • ½ cup chicken broth
  • ½ cup almond milk
  • 2 tbsp ghee (or substitute with coconut oil)
  • 1 tbsp minced garlic
  • 3.5 tbsp Dijon mustard (Primal Kitchen recommended)
  • 2 tsp dried thyme, parsley flakes, and rosemary (each)
  • 1 tsp salt + ½ tsp black pepper (adjust to taste)
  • 1½ tbsp arrowroot flour dissolved in 2 tbsp water

Instructions

  1. Preheat & Prep: Preheat your oven to 400°F (200°C). In a large casserole dish, combine shredded chicken, cooked bacon, broccoli florets, diced onion, mushrooms, and hash browns. Mix evenly.
  2. Make the Sauce: In a saucepan over medium heat, melt ghee and sauté minced garlic until fragrant (about 1–2 minutes). Add coconut cream, chicken broth, almond milk, Dijon mustard, herbs, salt, and pepper. Stir occasionally until the mixture simmers.
  3. Thicken the Sauce: Stir in the arrowroot slurry and whisk constantly until the sauce thickens and bubbles gently. Remove from heat.
  4. Assemble & Bake: Pour the thickened sauce over the chicken and vegetable mixture in the casserole dish. Stir to coat evenly and spread into an even layer. Bake uncovered for 1 hour or until golden brown on top.
  5. Serve & Enjoy: Let the casserole cool slightly before serving warm.
